We roast specialty coffee like someone drawing a navigation map: each origin, a latitude; each route, a story; each cup, coordinates that bring Ethiopia to your table.
Each sack that enters the roastery on Calle del Meridiano brings its own coordinates: the farm, the altitude, the producer, the harvest date. We roast in small batches on a 1962 iron drum, noting each curve on graph paper like a cartographer charting a new coast.
Because good coffee isn't tasted blind: it's read.
We work only with coffees grown above 1,500 m. Altitude tightens acidity and sharpens aroma; you'll notice it in the first line of tasting notes.
Direct trade with six cooperatives. We know the producer's name for each lot and pay 40% above commodity price.
Each roast profile is recorded and repeatable. If you fall in love with a lot, we can nail it cup after cup, month after month.
